Scotch-a-roos

This recipe is from the wife of long-time Pacific University wrestling coach Mike Clock. She served them at a wrestling get-together back when Joey and Michael were little and I was hooked! She kindly shared her recipe and I have been making them ever since. Enjoy!

Scotch-a-roos

6 cups Rice Krispies
1 cup Butterscotch Chips
1 cup Chocolate Chips
1 cup Karo Syrup
1 cup Sugar
1 heaping cup Peanut Butter

Butter/grease a big pan (I use a 9 x 13).

Measure 6 cups of Rice Krispies and set aside.

Measure out peanut butter.

Melt Karo Syrup and sugar over medium heat. Stir it and the very minute it starts to boil take it off the heat. DO NOT BOIL.

Immediately stir in peanut butter, then stir in Rice Krispies. Spread in pan.

Melt chocolate and butterscotch chips – spread on top.

After is has set then cut them up and serve them.

Ziploc Omelet

This works great!  Good for when all your family is together, like when we did it New Year’s weekend at Rockaway! Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and it is a great conversation piece.

Ziploc Omelet
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2), shake to combine them.
Put out a variety of ingredients such as:  cheeses, ham, onion, green pepper, tomato, hash browns, salsa, crumbled cooked bacon, mushrooms, olives, etc.

Each guest adds prepared ingredients of choice to their bag and then they shake it up.  Make sure to get the air out and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes.  You can usually cook 6-8 omelets in a large pot.  For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily.

Enjoy!!
