Energy Bites aka Almond Butter Balls

In preparation for #mitchandmollygethitched the Fraser girls decided to do a 21 day meal plan and daily exercise program.  Let’s be real, it’s all in preparation for a great dance party.  We want to have all the energy we need.  A friend, Lorna Day, shared this recipe with Abby and they’ve quickly become a family favorite.

Energy Bites / Almond Butter Balls

Prep Time 15 minutes / Chill Time 10 minutes

1 1/2 cups gluten-free rolled oats

2 T coconut oil

2 T almond butter (or smooth peanut butter)

1/4 pure maple syrup (or other liquid sweetener)

1 t pure vanilla extract **Honduran or Mexican vanilla extract is inexpensive and has strong flavor, if you can find it

1/2 cup almond flour or almond meal ** Winco bulk!

1/4 sea salt (fine grain if you can find it)

2T mini dark chocolate chips (or chopped dark chocolate)

1. In a high speed blender, blend the oats into a fine flour **food processor.

2. In a large bowl, combine the oil, peanut butter, maple syrup and vanilla and beat with a hand mixer until smooth. **kitchenaid mixer  Then add almond and oat flours, salt and mix again until combined.  Fold in the chocolate (chips) ** handmix

3. Roll the dough into small balls (about 1 tablespoon). Place the bites on a plate lined with parchment paper into the freezer and chill for 10 minutes ** i used a small cookie scoop

4. Store the bites in the freezer in a freezer bag for a quick and easy snack.
